vegan kebabs based on chickpeas

Ingredients
  

  • 1 cup cooked cheakpeas drained
  • 1 cup cooked lentils drained
  • 1 pcs small onion finely chopped
  • 2 cloves of garlic minced
  • ¼ cup breadcrumbs
  • 2 tbsp ground flaxseed mixed with 4 tablespoons water (flax egg)
  • 2 tbsp tomato paste
  • 1 tbsp soy sauce or tamari
  • 1 tbsp nutritional yeast
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon smoked paprika
  • ½ teaspoon turmeric
  • Salt and pepper to taste
  • Olive oil for brushing

for serving

  • Pita bread or flatbread
  • Sliced tomatoes
  • Sliced cucumbers
  • Shredded lettuce
  • Vegan tzatziki sauce or tahini sauce

Instructions
 

  • In a large mixing bowl, mash the cooked chickpeas and lentils with a fork or potato masher until they are partially mashed but still have some texture.
  • Add the finely chopped onion, minced garlic, breadcrumbs, flax egg, tomato paste, soy sauce or tamari, nutritional yeast, ground cumin, ground coriander, smoked paprika, turmeric, salt, and pepper to the bowl. Mix well until all the ingredients are combined.
  • Cover the bowl and refrigerate the mixture for at least 30 minutes to allow the flavors to meld and the mixture to firm up.
  • Preheat your grill or oven to medium-high heat.
  • Take the kebab mixture out of the refrigerator and shape it into small kebab patties or log shapes, about 2-3 inches long and 1/2 inch thick. You should be able to make approximately 8-10 kebabs.
  • If grilling: Lightly brush the kebabs with olive oil. Place the kebabs on the grill and cook for about 4-5 minutes per side, or until they are golden brown and slightly crispy on the outside.
    If baking: Line a baking sheet with parchment paper. Place the kebabs on the prepared baking sheet and brush them with olive oil. Bake in the preheated oven for about 15-20 minutes, flipping them halfway through, until they are golden brown and crispy.
  • Once the kebabs are cooked, remove them from the grill or oven and let them cool slightly.
  • Serve the vegan kebabs in pita bread or flatbread, along with sliced tomatoes, cucumbers, shredded lettuce, and your choice of vegan tzatziki sauce or tahini sauce.
