Classic Meat-Filled Ravioli Recipe

Ingredients
  

  • 2 cups all purpose flour
  • 3 large eggs
  • pinch of salt

for the filling

  • 1 pound ground beef
  • 1 cup ricotta cheese
  • ½ cup parmesan cheese grated
  • 2 cloves garlic minced
  • ¼ cup fresh parsley chopped
  • salt and pepper to taste

for the sauce

  • 2 tbsp olive oil
  • 1 pcs onion finely chopped
  • 3 cloves of garlic minced
  • 1 can tomatoes crashed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • salt and pepper to taste

Instructions
 

Prepare the Pasta Dough:

  • On a clean surface, make a mound with the flour and create a well in the center.
  • Crack the eggs into the well and add a pinch of salt.
  • Gradually incorporate the flour into the eggs until a dough forms.
  • Knead the dough for about 8-10 minutes until smooth. Cover and let it rest for 30 minutes.

Make the Filling:

  • In a skillet over medium heat, cook the ground beef and pork until browned. Drain excess fat.
  • In a large bowl, combine the cooked meat with ricotta, Parmesan, egg, minced garlic, chopped parsley, salt, and pepper. Mix well.

Roll Out the Dough:

  • Divide the rested dough into four portions.
  • Roll out each portion into a thin sheet using a pasta roller or a rolling pin.

Assemble the Ravioli:

  • Place one sheet of pasta on a lightly floured surface.
  • Spoon small portions of the meat filling onto the sheet, leaving enough space between each mound.
  • Place another sheet of pasta on top and press around the filling to seal. Use a ravioli cutter or a knife to cut out individual ravioli.

Cook the Ravioli:

  • Bring a large pot of salted water to a boil.
  • Carefully drop the ravioli into the boiling water and cook for about 3-5 minutes, or until they float to the surface. Remove with a slotted spoon.

Prepare the Sauce:

  • In a separate pan, heat olive oil over medium heat. Add chopped onions and garlic, sauté until softened.
  • Pour in crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 15-20 minutes until the sauce thickens.

Serve:

  • Plate the cooked ravioli and generously ladle the tomato sauce over them.
  • Garnish with additional Parmesan and fresh parsley if desired.
