Classic Meat-Filled Ravioli Recipe
Ingredients
- 2 cups all purpose flour
- 3 large eggs
- pinch of salt

- 1 pound ground beef
- 1 cup ricotta cheese
- ½ cup parmesan cheese grated
- 2 cloves garlic minced
- ¼ cup fresh parsley chopped
- salt and pepper to taste
for the sauce
- 2 tbsp olive oil
- 1 pcs onion finely chopped
- 3 cloves of garlic minced
- 1 can tomatoes crashed
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- salt and pepper to taste
Instructions
Prepare the Pasta Dough:
- On a clean surface, make a mound with the flour and create a well in the center.
- Crack the eggs into the well and add a pinch of salt.
- Gradually incorporate the flour into the eggs until a dough forms.
- Knead the dough for about 8-10 minutes until smooth. Cover and let it rest for 30 minutes.
Make the Filling:
- In a skillet over medium heat, cook the ground beef and pork until browned. Drain excess fat.
- In a large bowl, combine the cooked meat with ricotta, Parmesan, egg, minced garlic, chopped parsley, salt, and pepper. Mix well.
Roll Out the Dough:
- Divide the rested dough into four portions.
- Roll out each portion into a thin sheet using a pasta roller or a rolling pin.
Assemble the Ravioli:
- Place one sheet of pasta on a lightly floured surface.
- Spoon small portions of the meat filling onto the sheet, leaving enough space between each mound.
- Place another sheet of pasta on top and press around the filling to seal. Use a ravioli cutter or a knife to cut out individual ravioli.
Cook the Ravioli:
- Bring a large pot of salted water to a boil.
- Carefully drop the ravioli into the boiling water and cook for about 3-5 minutes, or until they float to the surface. Remove with a slotted spoon.
Prepare the Sauce:
- In a separate pan, heat olive oil over medium heat. Add chopped onions and garlic, sauté until softened.
- Pour in crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 15-20 minutes until the sauce thickens.
Serve:
- Plate the cooked ravioli and generously ladle the tomato sauce over them.
- Garnish with additional Parmesan and fresh parsley if desired.
